Culinary Arts C.A.S.
Overview
The Culinary Arts Certificate program prepares students for careers in the hospitality industry. Students develop the skills needed to seek employment in hotels, restaurants, resorts, casinos, clubs, catering, and corporate dining.
Requirements
To earn a Culinary Arts Certificate of Applied Science, students must complete the following courses:
- ANTY 133X: Food and Culture (3 hours)
- CULA 100: Culinary Arts Fundamentals (2 hours)
- CULA 101: Introduction to Knife Skills and Butchery (2 hours)
- CULA 105: Food Service Sanitation (2 hours)
- CULA 157: Pantry & Garde Manger (3 hours)
- CULA 160: Soups, Stocks, & Sauces (3 hours)
- CULA 161: Meats & Vegetables (3 hours)
- CULA 162: Storeroom Management and Receiving Operations (2 hours)

General Certificate Requirements
Additional requirements for graduation can be found on the Degree/Certificate Requirements for Graduation page. A minimum grade point average of 2.00 in all work attempted at the University of Montana-Missoula is required for graduation. Courses taken to satisfy the requirements of a major, minor, or certificate program must be completed with a grade of C- or better unless a higher grade is noted in the program requirements.
