Program Overview
University Microcredential for Improving Culinary Techniques
Presentation
The University Microcredential for Improving Culinary Techniques is a specialization course focused on obtaining maximum efficiency in the management of gastronomic businesses. Throughout the curriculum, students will expand their knowledge related to different techniques for handling, preserving, and cooking food.
Objectives
The objectives of this microcredential include:
- Plan and produce effectively
- Master the different techniques for handling and preserving food
- Control pre-preparation techniques and mise en place
- Know and apply expansion cooking
- Acquire knowledge at the highest level about the preparation of raw products: cooking without heat
- Acquire knowledge about concentration cooking
- Master mixed cooking techniques
- Acquire knowledge about vacuum cooking and its application in fifth ranges and conservation
- Manage the existing technological ingredients available to the gourmet

The programme consists of the following topics:
- Food handling, conservation, and cooking techniques
- Food pre-preparation techniques and mise en place: from reception to cooking
- Funds, broths, and demiglace; expansion cooking techniques
- Basic and derived sauces
- Raw product preparation techniques: cooking without heat
- Concentration cooking techniques
- Mixed cooking techniques
- Vacuum technique, controlled temperature, and applications; direct, indirect vacuum, fifth ranges, and conservation
- Introduction to avant-garde cuisine; technological ingredients and application
- Fermentations and preserves

The microcredential is designed for:
- Entrepreneurs and future owners of gastronomic businesses
- Professionals from the gastronomic sector with training and experience
- Professionals from the gastronomic sector without prior training
- Professionals from other sectors who want to update themselves and apply their profile to the gastronomic sector
- Directors, managers, administrators of gastronomic businesses
- Students and recent graduates in Gastronomy or any branch of study
Access Requirements
Applicants must meet at least one of the following profiles. No university degree is necessary. The ability to work autonomously and safely is an access requirement.
Selection Criteria
In the event that the number of applications exceeds the number of places offered, a selection will be made based on the following criteria:
- 40% CV; experience in hospitality and the food sector
- 40% FP in hospitality or equivalent accreditation
- 20% University degree related to the food industry, gastronomy, or food

The academic direction is led by Dr. Diana Catalina Pérez-Bustamante Yábar, and the faculty includes professionals with extensive experience in the gastronomic sector.

- University degree of the studies that give access to the requested postgraduate degree
- Curriculum vitae
- Responsible declaration of veracity of the data provided in digital format
- Any other document required by the Academic Department of Continuing Education for acceptance
Microcredentials are intended for students with or without a previous official university degree, allowing for the certification of learning results linked to short-term training activities. Successful completion of these courses through the corresponding assessment tests will entitle the student to obtain a Certificate with the name of the respective course.
