Hospitality Management: Theories in Practice

This module introduces you to the core conceptual framework behind operations and management of a business with a focus on applying and evaluating theories in practical context.


  • Module learning outcomes:
    • Analyse the role and characteristics of the hospitality industry
    • Apply relevant theories and concepts to contemporary hospitality operations and management context
    • Reflect on contemporary concepts that are emerging in the hospitality industry
  • Module content:
    • Hospitality as social phenomenon: historical origins, meaning and nature of hospitality and the complexities involved
    • Commercial hospitality industry: key players, historical development, economic value, structure, current trends, the use of industry statistics, media issues
    • Hospitality management systems: organisational structure, operation management, product development, corporate social responsibilities, relationship with education/training providers
    • Understanding hospitality consumer: principles of marketing, patterns of demand, characteristics of hospitality products, analysing service encounter
    • Hospitality labour market: demand and supply of hospitality workforce, workforce competencies, diversity management, career development
    • Hospitality finance: financial statement, budgetary control, cash flow, stock control methods
    • Global issues and hospitality: demographic and socioeconomic trends, technological innovations, political forces, legislation, ethical and environmental issues

How You Will Learn

Entry Requirements

You will need one of the following:


  • Level 4 qualification (eg HE Certificate) in hospitality or relevant subject eg tourism, business or management, plus a minimum of 1 year (full time equivalent) of relevant industry experience
  • Level 5 qualification in a non-relevant subject area and experience in the hospitality industry for 2 or more years (full-time equivalent)
  • Applicants who possess a relevant level 3 qualification will be considered if a proof of professional experience in the hospitality industry for more than two years (full-time equivalent) is included in application

English Language Qualifications

If English is not your first language you will need an English language qualification. For this course you will need at least one of the following:


  • IELTS (International English Language Testing System) 6.0
  • TOEFL 550 (paper based) 213 (computer based) or 80 (internet based)
  • Pearson Test of Academic English: 51
  • Cambridge Advanced Certificate: Pass
  • London Tests of English: we accept level 4 for undergraduate courses
  • International GCE O-level English Language: Grade C
  • International GCSE English/English as a Second Language: Grade C

  • 2025/26 for new entrants: £2,715
