Introduction to the MSc in Food Microbiology
The MSc in Food Microbiology is a one-year full-time course offered by University College Cork (UCC). This program is designed to equip graduates with advanced knowledge and skills in food microbiology, covering areas such as food safety, food biotechnology, and the role of microbes in food preservation and health.
Course Outline
The course is structured into two parts:
- Part I (55 credits) includes modules such as Library Project in Food Microbiology, Research Frontiers in Food Microbiology, Molecular Techniques in the Life Sciences, and Analytical Food Microbiology, among others. Students also choose from a range of elective modules to complete their 55 credits.
- Part II (35 credits) consists of a six-month lab-based research dissertation in the area of food microbiology.
Modules
The modules for Part I are designed to provide a comprehensive understanding of food microbiology, including:
- MB6006 Library Project in Food Microbiology
- MB6027 Research Frontiers in Food Microbiology
- ML6005 Molecular Techniques in the Life Sciences
- PG6001 STEPS - Scientific Training for Enhanced Postgraduate Studies
- MB6010 Analytical Food Microbiology And elective modules such as:
- FE6110 Food Markets and Policy
- MB4110 Food Fermentation and Mycology
- MB4111 Microbial Food Safety
- MB4113 Food Biotechnology
- MB6114 Hygienic Production of Food
- MB6003 Functional Foods for Health
Course Practicalities
The course includes lectures, workshops, and laboratory practicals. Students can expect up to 138 lecture hours and approximately 70 additional directed study/reading hours. The six-month lab-based research dissertation is a key component, allowing students to develop their research skills under the supervision of a member of staff.
Assessment
