Course Overview
This one-day short course is designed for food industry professionals to provide an understanding of the principles of good sensory practice. The course covers the importance of being objective, selection and training of taste panellists, and a review of sensory methodologies to aid in selecting the most appropriate method for use in the workplace.

How You Study
The programme is a one-day short course, usually delivered in person at the National Centre for Food Manufacturing, Holbeach, but can also be delivered on business premises if requested. The course is divided into two parts:
- Part one provides an introduction to how foods are perceived through the five human senses and explores key physiological and psychological factors involved in perception.
- Part two focuses on methodology in sensory science and its application, introducing learners to the taste panel, including recruitment and training of assessors, and practical considerations for sensory testing.
Pre-requisites
Knowledge and experience of sensory evaluation are mandatory to attend this level 4 course with an end examination. For those new to sensory evaluation, a half-day course, Introduction to Sensory Assessment, is recommended.
IFST Accreditation
The programme has been accredited as part of the IFST's Sensory Science Group's accreditation scheme. The IFST is the UK's leading professional body for those involved in all aspects of food science and technology.
How You Are Assessed
The course is assessed on the same day as it is delivered through a 45-minute examination. Upon successful completion, participants receive a certificate accredited by the Institute of Food Science and Technology (IFST).
