Program Overview

The Washington State University Extension offers an online food preservation program called PRESERVE THE TASTE OF SUMMER. This program is designed for in-home consumers who want to learn about food preservation and food safety.


Program Details

  • The program consists of eight online lessons that provide the most current USDA-approved food preservation recommendations.
  • Topics covered include:
    • Food safety
    • The basics of canning
    • Specific food preservation methods, such as:
      • Pressure canning
      • Boiling water bath canning
      • Freezing
      • Drying
      • Making fruit spreads
      • Pickled foods
  • A certificate of completion is provided at the end of the course.

Program Requirements

  • To participate in the online series, participants will need:
    • A computer made in the last five years
    • A stable internet connection
  • The cost for the online series is $25.

Hands-on Classes

  • WSU-Klickitat County Extension may offer hands-on food preservation classes.
  • Class topics may cover:
    • Canning fruits and pie fillings
    • Pickle products and making sauerkraut
    • Jams, jellies, and spreads
    • Tomatoes and salsas
  • Hands-on classes will be determined by interest.
  • Participants must complete the online training before taking a hands-on class.
