The "From Plate to Identity: A Taste of Europe" program is a faculty-led initiative that delves into the rich intersections of food, culture, and identity across three of Europe's most vibrant gastronomic landscapes. This three-week program combines academic learning with hands-on culinary experiences, making it a transformative cultural and educational journey.
Location Description
The program takes place in three cities:
- Porto, Portugal: Known as the birthplace of port wine, Porto is a historic riverside city characterized by its colorful architecture, rich maritime heritage, and renowned food scene.
- Lyon, France: Recognized as the gastronomic capital of France, Lyon boasts a culinary tradition shaped by its strategic location between northern and southern France.
- Palermo, Italy: The capital of Sicily, Palermo is a melting pot of Mediterranean cultures where Arab, Norman, Spanish, and Italian influences converge.
Itinerary
The program is structured to provide deep immersion in each city's culinary landscape and cultural context:
- Week 1: Porto, Portugal (May 18-24): Explore Portuguese culinary traditions through market visits, a culinary workshop with a local chef, and fresh seafood in the coastal community of Matosinhos.
- Week 2: Lyon, France (May 25-31): Discover French gastronomic traditions and hospitality culture through visits to famous food markets, restaurants, and culinary institutions.
- Week 3: Palermo, Italy (June 1-7): Uncover Sicilian culinary heritage through street food tastings, explorations of the vibrant Mercato Ballaro, and cooking classes focused on traditional techniques.
Housing
Students will be housed in conveniently located hotels in each city, with double occupancy rooms. Accommodations provide easy access to program activities and local neighborhoods. Most meals are included as part of the program experience.

Courses and Credits
Students register for a total of 3 credits:
- FOL 3930: Special Topics (3 credits) The course examines food as a lens for understanding cultural identity, regional history, and social dynamics in contemporary Europe.

The program cost is $3,934, which includes:

The program fee payment schedule is as follows:
- Deposit: $500.00 (December 1, 2025)

Cancellation and Refund Policy
- $500 deposit is non-refundable
- All payments are non-refundable
Physical Activity
This program involves daily walking through city neighborhoods, markets, and historic sites, as well as standing during cooking classes and food tours. Students should be prepared for moderate physical activity in varied weather conditions.

Student Stories
From Turkey studying in Florida It is one of the largest university campuses I have ever been to as I struggled to find the places that I needed to be multiple times. Food choices are great, library is phenomenal, and water fountains are very pleasing to sit by. SASC Building has very interesting architecture.
Studying in Florida I went here for my undergrad back several years ago and came back for my graduates. This university is a blast of culture and learning. Most of the professors are amazing, there's clubs for everything, classes that range from odd to amazing and everything in between. They keep adding to MMC making new buildings, bringing in new vendors, and creating new art.
It's an awesome campus. Everyone is nice and helpful. It's not loud. The students are very chill. There are students of all ages and backgrounds, from the 20s to 30s to the 40s to the 50s...you get the jist. Anyway, there are many international students as well. I like that everything is there for the students. All kinds of activities, restaurants and more importantly help. There is help for anything and everything they need. They have free private counseling for anyone that needs it. They make sure that each student takes a mandatory training session on identifying someone in need or danger. They are big on safety for sure. It's a good place. It's expensive but think about all they offer. My fave part, the have some of the best professors. I'm in Creative Writing and many of my professors are Published Authors!
